蝸行移動---第三次分享
Snail Walk

火龍果野菜碗粿


材料:
在來米粉600克
玉米粉100克
地瓜300克
火龍果兩顆(小顆三顆)
野菜於現地採集
香油50cc
滾水1200cc
冷水550cc
調味:鹽、糖、胡椒粉
火龍果漿( 用果汁機打汁或切成小粒狀直接擂碎成果泥)
可用蝶豆花、咸豐草花和地瓜做裝飾。
佐醬:蜂蜜金桔醬
做法:
1. 將在來米粉與玉米粉加入550cc冷水調勻
2. 採集回來的野菜加鹽擂過殺菁備用
3. 火龍果擂成汁,地瓜切小丁備用
4. 1200cc水加熱煮滾,加入火龍果汁與香油50cc, 用鹽、糖、胡椒粉調味
5. 加入米漿,小火煮至稠狀
6. 去小碗分裝,分次加入擂過的野菜及米漿,再鋪上地瓜碎
7. 大火蒸煮25分鐘,取出置涼即完成
25~30人(視碗大小)

在土地滋養下有著許多繁盛的生物與我們共存著,我們希望透由慢慢的行走,看見那些我們熟悉卻又不知名的事物,那些唯有慢慢的移動才能發現的奧秘。
 
本次的作品依循植物學家楊宗愈老師在麻豆踏查的文本,並以此文本針對可食用的植物進行再次尋訪,並將其融入麻豆在地的飲食文化──碗粿中,同時邀請環境料理師努亞-阿海納,結合在地有善土地的小農食材進行共同創作,如有機菱角、有機柚子等等……將傳統的碗粿延續其美味並加入環境食材來創造新的可能性。

此次踏查的路徑所發現可食用植物如下

5.毛西番蓮

During the long and continous journey ancient Hootikors people always lived in harmony with the a earth. They adjusted their behavior and sought ways to survive through listening to the messages conveyed by the land and the whole of creation. They followed conventional doctrines and were strongly connected with Mother Earth, Gaia. By listening to the wind, observing the stars, touching the soil, and smelling a the air, Hootikers learned from the soft whispering of the Earth to pass on the wisdom of ancient times.

Although modern Hootikers have lost their ability to feel the whole of creation, we can still learn how. to respond to nature from some incomplete scripts surviving from ancient times. After researching into such documents, we can find our fundamental attitude to living. The things we make help us to transform our way of living. So, modern Hootikers attempt to look for the right attitude in the way we live with nature to fulfill the guidance of Mother Earth through our life practices.

At a Snail's Pace is an attitude relating to a carefula observation of our surroundings when our bodies are in a particular environment. The movements, which make a bond between our heart and the land, also represent a link between our body and the environment.

蝸行移動---第四次分享---薑黃蘿蔔絲粿


這次的糖業大地藝術祭中,藝術家拉馬-默提司謝怡如與環境料理師阿海納、在地的特色碗粿業者南方米造合作將藝術創作結合美食品嚐、地景踏查、器皿以及創意烹煮,來分享另一種新的體驗。


薑黃蘿蔔絲粿:
材料:
在來米漿(米1:水3)
水600cc
薑黃粉 10g
鬱金香粉15g
蘿蔔絲乾180g
薑絲100g
酸筍絲100g
香油30cc
調味:鹽、糖、胡椒粉
作法:
1.將水和在來米組合後打成米漿,再將米漿分次加入600cc的熱水中攪拌成糊狀。
2.且將上述其他食材與調味再拌入米漿之中。
3.取適當盛器盛入調和完成的米漿,入蒸籠大火25分鐘即完成。(待冷却後口感風味更佳!)
醬料:
素蠔油200g
蜂蜜20g
金桔醬120g
薑泥30g
香油20g
鹽3g

Snail Walk

花生菱角碗粿

材料:20碗
花生300克
在來米粉450克
菱角300克
玉米粉100克
香油50cc
薑50g
麻醬50g
味噌250g
冷水550cc
滾水1350~1400cc

做法:
1. 將花生與菱角預先煮熟備用,再以700cc水和50g薑打成薑
2. 薑花生薑與在來米粉、玉米粉調和成米漿
3. 將1350~1400cc水加熱至滾,隨既沖入米漿中,並加熱至糊狀
4. 調味:麻油1/3匙、香油一匙、鹽、糖、胡椒
5. 菱角拍成大碎塊,墊在碗底,再將米漿倒入,中間的位置再放入菱角碎塊,再倒入米漿至8分滿
6. 入蒸籠大火20分鐘去出置涼即完成
